Lemon Meringue Doughnut

Directions

  1. Add egg, milk, lemon juice and oil to a bowl and mix, add to the dry ingredients, including lemon rind and mix for a further 1 minute
  2. Once mixture is ready, spoon mixture into doughnut rings
  3. Bake for 4- 6 minutes until cooked.
  4. For the meringue whip up egg white adding sugar one spoon at a time, once peak has been reached fold in cream of tartar and vanilla.

Ingredients

    1 cup flour (all purpose)

    ½ cup sugar

    1 tsp baking powder

    1 egg

    ½ cup milk

    4 tbsp cooking oil

    1 tsp lemon rind, finely chopped

    1 tsp lemon juice

     

    For the meringue:

    1 egg white

    3 tbsp sugar

    ½ tsp vanilla

    Pinch cream of tartar
