Red velvet cupcake with cream cheese frosting

Directions

• Line the cupcake maker .
• In a bowl add cake flour, cocoa powder and salt
• Beat together sugar and oil until combined, add eggs, food colouring and vanilla until well combined.
• Add some flour and buttermilk, alternating.
• In a small bowl mix the baking powder and vinegar together – this will foam, add this to the mixture, mix well.
• Fill cupcake holders ¾ and bake for +- 20 minutes.
• Remove and all to cool.
• Top with cream cheese frosting

Cream cheese frosting method:

• Beat the butter and cream cheese until fluffy.
• Add sugar ½ cup at a time, then add the vanilla essence.
• Beat until smooth and combined.

Ingredients

    2 ½ cups Cake flour

    2 tbsp cocoa powder

    1 tsp salt

    1 ½ cup vegetable oil

    2 eggs

    ½ tsp red colouring

    1 tsp vanilla essence

    1 cup buttermilk

    1 ½ tsp baking powder

    2 tsp white vinegar

    Cream cheese frosting:

    1 cup butter

    340g cream cheese

    4 cups icing sugar

    1 tsp vanilla essence
