Slow cooked Lamb Shank

Directions

  • Season the lamb shanks with salt and pepper.
  • In a hot pan, add the oil and brown the shanks evenly
  • Set aside once brown
  • In the same pan add the remaining oil and sauté the onions and garlic
  • Add the paprika and tomato paste and stir well.
  • Add the chopped tomato, wine and sugar
  • Add the Bouguet Garni and allow to simmer for 1- 2 minutes
  • Remove from the heat
  • Switch the Salton Slow Cooker on high
  • Add the lamb shanks and the tomato sauce.
  • Lastly add the Peppadew diced and garlic head
  • Cook on high for 1 hour then turn down to low for 7 to 8 hours or until the meat is falling off the bone, season.

 

 

Chefs tip:

  • Once cooked serve with cauliflower mash, glazed carrots and asparagus spears
  • You may serve the sauce chunky or blend and pass through a sieve for a smooth sauce 

Ingredients

    2 Lamb Shanks

    3 tbsp oil

    1.2 onion, diced

    3 gloves garlic, diced

    1 tbsp paprika

    2 tbsp tomato paste

    800g chopped and peeled tomatoes

    1 cup red wine (replace with ½ cup stock and ½ cup red grape juice)

    ½ cup sugar

    Bouquet garni – spring rosemary, thyme and parsley

    Garlic head cut in half

    2 tbsp Peppadew diced

    Salt and pepper to season
